Ok, I know Banana Bread isn’t a meal, but, it’s still a wonderful breakfast food to make in bulk and freeze.
When we bake banana bread, we make as many loaves as possible. With the help of my kiddos, we make three at a time assembly style.
Our Favorite Banana Bread Recipe
To make ONE loaf:
1 3/4 cup whole wheat or spelt flour
1 tsp cinnamon
2 sp baking powder
1/2 tsp baking soda
1/4 tsp salt
1/4 cup oil (olive or coconut)
1/2 cup honey
3/4 tsp vanilla
1 cup mashed up banana
Preheat oven to 350 F
Combine dry ingredients in one bowl. Combine wet ingredients in another. Pour wet ingredients into dry and stir until combined. The batter should be thick.
Spread batter into an oiled, loaf pan and bake 30-45 minutes (check on the loaf at the 1/2 hour mark and cook additional time if necessary. All ovens are different and we don’t want a brick instead of a loaf).
Cool for 10 minutes in the pan and then transfer to cooling rack. Cool completely before wrapping and freezing.
To use frozen loaf – thaw, slice and warm (if desired) in a toaster oven or microwave.
